Simple Coffee Cake

Similar to the Fast Chocolate Cupcakes recipe, this no-fuss cake can be baked, cooled and ready to eat in less than an hour so it’s perfect to to serve up in case of unexpected guests or just to have around the home for when you feel like a slice of something sweet.

Ingredients you'll need for this dish

Cake

– 120g Sugar (~1 cup)
– 120g Butter
– 120g Self-Raising flour (or Plain Flour + 5g Baking Powder)
– 2 eggs
– 2 tsps instant coffee

Frosting
– 120g Icing Sugar
– 60g Butter
– 2 tsps instant coffee

Instructions

  1. Start by beating the sugar and butter together until pale and then add the eggs. Mix well. Mix the 2 tsps instant coffee with about 1 tbsp Cake mix spread in the tinboiling water. Pour into the cake mix, add the flour and stir well. Grease and flour a sandwich tin and spread the mixture into the tin. Bake in a preheated oven, around 140 degrees Celsius for about 25 minutes, or until golden brown and springy to the touch. If unsure, stick a fork into the middle. If you can pull it out clean it’s done.





  2. Coffee mixOnce the cake is baking in the oven, move onto the frosting. Mix the softened butter with the icing sugar in a bowl. Once again, mix the coffee with the boiling water and pour into the still powdery frosting. Mix well until you have a smooth paste. Leave aside to cool.








  3. When the cake is ready, remove from oven and leave to cool for around 30 minutes. When cool, spread the icing over the top of the cake and enjoy!

    Hey.. I made that cake yesterday (again :-D) but I took cacao powder instead of coffee and added 2 bananas to the paste. Worked fine, but I had to bake it at 160° and a bit longer.
