Grilled Red Pepper and Feta Dip

I do believe this has a different name but I can’t seem to find it alas… but I digress. Did I talk before about how I love dips? What’s not to love? So many different types, colours, flavours – and you can change them in so many different ways. I’m a bit of a garlic fiend myself so I was a bit annoyed that this dip wasn’t quite as garlicky as I usually like, so for the recipe I’ve upped the quantity a little. Serve up with just about anything you like – chips, bread, raw vegetables etc!

Ingredients

Grilled Red Pepper and Feta Dip ingredients

Ingredients you'll need for this dish

– 2-3 red Bell Peppers
– 50g Feta Cheese
– 3 cloves Garlic
– 2 tbsp Olive Oil
– 1 tsp ground Cumin

You’ll also need
Food Processor

Instructions

  1. Start off by placing the peppers and garlic (unpeeled) under the grill and heat, turning occasionally until the skin is blackened and charred – usually around 20 minutes.

  2. Wait for the peppers to cool a little before peeling off the skin. Cut open the peppers, remove the stalks and any seeds and drain away any juices. Peel the garlic and place the peppers and garlic into a Food Processor with the Cumin and Olive Oil. Add in a bit of Salt and Pepper and crumble in the Feta Cheese.

  3. Blend until smooth – around 1 minute and transfer to a suitably sized bowl or container. Allow to cool in the refrigerator for a few hours before eating and enjoy!

    Yum! I never thought to add cumin to a red pepper dip. My hubby would love this! Maybe I'll have to make some for his lunches. πŸ™‚

      Everything is better with cumin… except maybe cake! I have a minor cumin obsession, it's just the most delicious spice I know. I must post my recipe for warm Tunisian salad one day too – it's in the same vein as this dip, really tasty πŸ™‚

      Thanks Greg! I love dips too. Give me a big plate of vegetables and tortilla chips and several bowls of dip I'm in heaven πŸ˜€
