When I was a kid I used to think avocado was the “ickiest” thing in the world. As I got older I began to see that this thing actually had an unbelievable flavour and was good in so many things. I especially love guacamole because you can eat it with just about anything – in a sandwich, as a dip, tacos, salads, the list goes on. I remember one time I bought some “Guacamole” from a store, getting it home and finding some kind of green mucus inside the jar which they were passing off as food. Total avocado content? … 3%. At that time I vowed never to buy guacamole again and there’s just no need to when it’s as fast and as easy as this.

Ingredients

Guacamole Ingredients

  • 2 ripe avocado pears
  • 2-3 tbsps natural yoghurt
  • 1 large clove of garlic, minced
  • 2-3 tbsps olive oil
  • 2-3 tsps cumin
  • Juice from half a lime
  • Salt
  • Pepper

Instructions

  1. Start by removing the seed and peel from the avocado. If they are very ripe this is no problem and you can put them into a bowl with the rest of the ingredients and mix well with a fork until smooth. It’s best to start by adding just a little yoghurt, olive oil and cumin and you can add more later after tasting. If, like me, your avocado wasn’t quite ripe enough to mash by fork then you’ll need to use a mixer/blender. In this case, chuck everything in except the oil and begin to blend.

  2. Add a bit more oil as it blends to help keep everything smooth. Once smooth, transfer to a bowl and serve. You can stir in a few sprinkles of cayenne pepper for a bit of a kick should you wish!

I will try it on the weekend ) It's not easy to find good avocados here, but I know a place.

Have you ever tried to skip the yoghurt btw? Do you think it's necessary to add it?

No, I wouldn't say it's necessary at all – sometimes I use crème fraiche instead, and sometimes nothing at all. It doesn't make the guacamole "creamy" at all (the avocado is already fatty and creamy) – but it gives a good colour and consistency to it.

I will try to skip the yougurt for the first time to see how it goes. I love avocado taste and I'm afraid it will get lost in the yougurt.

Nooooooooooooooooooo! It really doesn't. Just try a couple of spoons of creme fraiche or something then! Above all, don't skip the cumin… that's very important!

Maybe stick to 2 teaspoons of it though, instead of 3… some people don't like it very much!
