Mini Black Forest Cakes, an Anniversary, and a Giveaway!

[dropcap style=”font-size: 60px; color: #0B0B61;”]Birthday wishes are in order (of sorts), for today it’s my one year “Blogiversary”. Five Euro Food is a year old today and what better way to celebrate a year in the blogosphere than with cake… and chocolate (and cream!)? The recipe is towards the bottom of this post but first I’d like to talk about some of my experiences during the past year. I’ve learned a great deal, and met a great many wonderful people and feel that now is a perfect time to detail a few of the highlights of my time blogging so far. There is still so much I want to try – things I want to perfect, make again, or just make for the first time so here’s to many more years! Cheers everyone 🙂

Firstly, I’ve had fun – a whole ton of fun. I start a great many things in life, but it’s not often that I still have the same momentum and enthusiasm for these things after a few months have passed, let alone a year. Averaging one blog post every three days, I’m not as regular as some people are, but I’m certainly no less enthusiastic, and the wonderful thing is, I still have the desire to create. Every time I flick open a book or watch a cooking show, I realise that there are so many things still to try. Many spices and herbs I have yet to use, meats and fishes I’ve never prepared, world cuisines which have never touched my palate – I want to try them all!

Secondly, I enjoy the communal aspect of blogging so much. The feedback, the tips, learning new ingredients and cooking methods – none of which I would have had were it not for getting to know my readers here so for this, I thank each and every one of you who visits my site. I feel like I know so many of you, despite not even necessarily knowing what you sound or look like.

Thirdly, when I started, the photography aspect was really secondary to the main goal, which back then was “write a recipe, post it”. Over time I realised that the most enjoyable thing I can imagine is when people actually try my recipe (and hopefully like it). It’s a very humbling thing when you post a recipe and someone reads it, and out of all the other things they might have seen that week, they decide to try the food from your own post. I realised that posting something with a bad photo isn’t really going to make anyone want to try anything so some improvements were needed. Hopefully you’ll agree that my photos have come a long way since 2010!

Changing Photography

Coming back to my site in general, I feel that it lacks direction a little. I started it with the aim of creating “food for five euros (or less)”. Almost each post I make is indeed five euros or less, but I feel that generally that’s not such a hard thing to do. I’m a strong believer in ethically produced food – I try to buy organic/fair-trade/free-range where possible so I won’t give up this belief, but going forward from now I’m going to really try harder to drill down on this concept:

  • More recipes using ingredients which are in season, including preserving such ingredients for year-round use.
  • More recipes which focus on creating cheap, home-made alternatives to things which people might otherwise buy.
  • Revisiting, and improving upon, some of the recipes which I’ve made in the past.

I happened across an artist some years ago while browsing Etsy. Naoko’s Stoop based in New York creates truly charming, idyllic paintings which I find just delightful. I have bought a couple of her prints before and actually have them hanging above my computer. Now, however, as promised – today’s recipe! I decided to opt for a “celebratory cake” for the One Year post, and you don’t get more celebratory than a good Black Forest cake in my opinion. It’s got all the things I love – chocolate, cream, cherries – and these particular ones are a perfect size. I’m a big fan of individually made things. I think it can look a lot prettier than one big cake, for example, and you have the added benefits of automatic portion control. Make the mini cakes as big, high, round, flat as you like to ensure they fit perfectly within your dietary needs for the meal you’re serving them with. I hope you like them! 🙂

Ingredients

Mini Black Forest Cake ingredients

  • 60g Butter + ~10g
  • 60g Sugar
  • 55g Plain Flour
  • 2 tbsps Cocoa Powder
  • 1 tsp Baking Powder
  • 1 Egg
  • 120g Dark Chocolate
  • 200ml Whipping Cream + ~4 tbsps
  • 200g Pitted, canned Morello Cherries – or regular cherries

Optional

  • 4 tbsps Kirsch or other cherry liqueur

Instructions

  1. Preheat your oven to ~170 degrees Celsius. In a large bowl, cream together the butter and sugar. If you find the butter is very hard, a few seconds on high in a microwave will soften it right down for you. Crack in the egg and beat in. Sift in the plain flour, baking powder and cocoa powder and fold into the mixture until you have a smooth mixture.

  2. Arrange four paper muffin cases in a muffin tray and split the mixture between the paper cases. If you have two much mixture then by all means add an extra one or two paper cases. Place the tray into your preheated oven and cook for about 20 minutes. After this time, test one by sticking a metal skewer or fork into the centre. If it comes out clean then they are done. When they are ready, remove from the oven and place on a rack to cool.

  3. While the cakes are cooking, melt the chocolate in a bowl or jug set in a pan of water which is heating on the stove. Stir regularly, and when it’s completely melted pour out almost all of it (saving about 1-2 tbsps left in the bowl) onto a large sheet of parchment/baking paper laid on top of a hard surface, like a baking tray. Spread out the chocolate to form a large square, about 2mm thick and try and make the chocolate as smooth as possible. Place the chocolate sheet carefully into the refrigerator.

  4. Return the bowl to the hot water bath and add in the 4tbsps of cream and the 10g of Butter. Stir well until everything is melted together to form something like the picture below. If necessary, and if you have it, add in a little extra chocolate. Transfer to a bowl and allow to cool. Meanwhile, whip the cream until quite stiff and place into the refrigerator to cool down after the whisking.

  5. When the cakes have cooled, remove them from their paper cases and cut off the edges to form a rough square. Split each cake in two through the middle with a knife. If you decided to use it, you can sprinkle half a tablespoon of kirsch or other cherry liqueur over each cake half (8 halves in total). Next, spread 4 halves with some of the cooled chocolate ganache. Drain the cherries from their syrup and cut them in halves. Place some whipped cream on top of the ganache and then arrange cherries. Place the other half of the cake on top, and add another layer of ganache on top of the cake.

  6. Remove the chocolate sheet from the refrigerator and trim the edges. Cut into strips which are slightly taller than the cake as it stands now, and about the same width as each edge. “Paint” the rough side of the chocolate strips with more ganache and stick to the edges of the cake. When all four strips are in place on each cake, add in more cream on the top and add more cherries. Enjoy! 🙂

    I'm going to start crying now. I've been planning on making chocolate truffles, chocolate malteaser cake, double-choc cookies + muffins, and now I want to make this chocolate forest cake: because it doesn't have any alcohol in it, which I'm glad about (not a drinker of any sort).

    But that's not all, I'm also going to start crying because I lost 2 marks on your really fun quiz, and I don't know which questions I lost them from!

    I really enjoyed this post! But I'm sort of dreading my own one, because I'm bad with doing nice things like this…. hmm.. Congrats, nevertheless, and I hope to one day update you on my making of these amazing little cakes!

      Thank you Fati! I hope you have a chance to make the cake… if you don't drink any alcohol I find it helps to spoon some of the cherry syrup over the cake before "building" the cake together. It gives a lot of extra moisture to the cake which is really delicious!

      I checked out your results – in fact you were only wrong on one question (but it was a question worth 2 points) – I can tell you the question and correct answer after the quiz has finished if you'd like, or I can tell you which one it was by sending you a mail to the email address you entered to leave the comment here with – up to you! Don't want to give any other people an advantage, but still – 20/22 is still a good score… I'm impressed! 🙂

Your photography skills have definitely improved, I cringe at my early pics and still have difficulty to this day…something more to learn!     Charles…. I’m so happy that Five Euro Food was born!!! Happy, Happy, First Year Blog Anniversary. I can genuinely say that you make the blogging world, and my day, a better place. Loved viewing your before and after food shots and am inspired by how far you’ve come on the photography front (it gives me some hope! :)) – these mini Black Forest Cakes are the perfect punctuation on your Celebratory Day. Just gorgeous and I know how much you like cherry with your chocolate (as do I….) . I am particularly taken by your chocolate sheets – they worked out so well and I’m loving the boxed in gateau… what a great effect – are the side slivers chocolate shavings from the sheets?       Aw, thank you so much Kelly! Black Forest cakes have pretty much all my favourite things inside so they're pretty much an ideal cake for me! 😀 The side slivers are actually the whole chocolate sheet which I cut up using a hot knife – I'll tell you though – next time I make these I'm doing it in winter out on the balcony. Handling wafer thin chocolate is pretty much the most annoying thing I can think of :@ My fingers were a hell of a mess afterwards and one of the mini-sheets melted down into a puddle on one side of the cake! Disaster! Don't forget to enter my little competition if you have a moment! 🙂

    Happy Anniversary!!!! Whooohooo! So you pictures are much better now, I know exactly what you mean, I had some terrible pics when I first started before I realized natural light is best!       Thanks Jen – I still struggle with lighting. I look at other peoples' photos and I feel SO JEALOUS! Basically, my apartment faces South, and I have no windows facing in any other direction. This is absolutely terrible for photography, especially in autumn/winter when the sun is low. The only time I can take photos when it's not insanely dark (between about 10-15) I have super-bright piercing sun burning giant shadows on the table from the "delicately placed cookie" or whatever. I really need to get a diffuser or something and then I can really start doing magic hopefully 🙂

        I know what you mean, as the year goes on the earlier it gets darker…I'm not looking forward to Day Light Savings this Sunday…. I really don't know what I'm going to do, as I have not mastered the indoor lighting by any means… I hope to take a class soon on indoor food shooting, if I do I'll send you some tips!

          Ah, we put our clocks back in Europe last Sunday already – I love the first day after this each October/November. For the first day you *really* notice that extra hour! My wife bought me a book – From Plate to Pixel, about Digital food photography and styling. I need to get back into that – I was learning a lot – I just need to go out and get myself some sort of reflector and diffuser!

      Thank you so much for your kind comments Kristy! You could always peel away the little chocolate "box" from round the outside. It doesn't taste too chocolatey apart from that and it's so goooood! I wish I could have sealed the edges to make a real "box", but I was already enraged from the chocolate melting all over me (I have a new-found respect for pastry chefs and people working with chocolate!). It's been a pleasure reading your site too and getting acquainted with your wonderful family! I'm looking forward to seeing what adventurous places you might "culinarily visit" next!           Oooh, I love madeleines – I feel a bit bad for having never made them, even despite living in France. I love when they have this delicious, delicate vanilla flavour… so yummy.     Happy anniversary, Charles! I feel I have known you for ages, one year frankly feels so short! I am so happy you have plans for the future (it means you don't consider stopping this blog, which would be a tragic loss). I hope you will realise all the goals, I cross my fingers. Congratulations once more for your progress with photos, you make me feel more and more ashamed of mine.

      Thank you Sissi! Indeed, it's only 365 little days, but no, I definitely have no intention of stopping. I've invested far too much effort into getting my little place on the web just how I want it. Besides – I still have like 5 logos which are waiting to be cycled through! I really need to buy a diffuser to get even better photos I think. My home's location is terrible for natural light. When it's daytime I get really strong, harsh sunlight all day which makes for really bad photos so if I can just crack that problem maybe I can improve even more! Don't forget to maybe take my little quiz if you have time! No-one could get 100% yet so I'm curious to see if anyone will! 🙂

    Still, HAPPY Blogversary, it's really fun and exciting to be hitting another milestone, isn't it?

    It doesn't matter whether you're a regular or not, the passion never dies, no matter how busy we get! I always remember to get back to my blogs, because I just love and miss writing ALL the time, even when I am sickeningly busy..and now, I am also back again…hehe, I have a pretty good reason for being away too.

    Happy Blogiversary, Charles :)! I really love your idea of mini black forest cakes! My husband and I are not much of a cake eater, so we never manage to eat one whole cake whenever I make one. Next time I'll simply make mini cakes instead :-)!

      Not… much… of a… cake eater?? A life without cake is no life at all! Haha, I personally love ALL cakes, but I can understand the need to have smaller quantities sometimes. Maybe you want something sweet but not too much, it's why personalised portions are perfect. I know for sure, for two people, making a massive cake is really impractical too. It's not quite so bad with just plain, regular sponge cakes or fruit cakes, but if you want to have something which normally has lots of cream and fruit or chocolate on top, it's a waste of time to make a massive dessert cake which could feed 8-12 people, and then try and force yourself to eat it when you're just 2 people. I think I tried this too much in the past – making huge cakes for just 2 people… it's a bad idea! 😀

    The madeleines were easy to make though I didn't bother refrigerating the batter which is supposed to create the 'hump' … no baking powder for me … so there was a little one but not as huge as I've seen. More of a 'belly' . 🙂

    I'm not mentally equipped to do any quizzes these days but, if my mind clears, I may give it a shot before the deadline. I'm just afraid I'd embarrass myself with how badly I'd do.

      The madeleines sound great anyway – I never made them myself before… didn't know that the refrigeration made the hump. What a fun thing to know. If I can buy some little madeleine pans I'll give them a try sometime. I love to dip them in coffee!

        I found the recipe I posted at my LJ quite easy, and it's not necessary to wait and use madeleine pans, muffin tins work just as well for puffly little round cakes that you can dip in coffee or tea.

    Happy blogiversary, Charles! It's such a wonderful milestone. I truly love reading your blog and getting to know you. You always post such unique recipes. And yes, your photos have come a long way, but I'm pretty sure it's the same for all of us, so no worries! 😉

    Congratulations on your first Blog Anniversary:) I just celebrated mine last week too!!

    But first, I must say you have a 'gourmet' creation on your big milestone. It looks gorgeous and insanely good. You have such a wide variety of food that I love to come back for more everytime I visit I learn something. So once again, happy cooking and many more years of blogging..

      Thanks so much Malli – I didn't think it's still something I'd be doing after a whole year! It makes me so happy that you enjoy looking around my site. There are some categories I could do more dishes in – I'd like to try and do more vegan things, more desserts… I'll try and work on those in the coming months!

    Happy 1st Blog Anniversary!!!!! You've made it one year and that is such a great accomplishment. Sorry I am late with the congrats but I had no electricity but now I do :).. so I have to come back and enter the contest. I have heard of this Etsy shop before :).. so I can't wait.     I really like Black forest, but to be honest last time I had it as a frozen version from m&s) I can only dream about something like that nowadays tho.

      Hey Greg – thanks a lot! I see you were able to take the test, but something weird happened, and I'm not sure how. I tested it quite extensively before posting it to make sure it wouldn't bug out, but it seems that either it didn't display an entire section of questions to you or somehow you accidentally missed them, because your final score was marked out of 8 questions, instead of 13. No idea what happened, I'm sorry – it only seems to have happened to you too 🙁 If you wanted you can go back and re-take the quiz and hopefully it will display the questions to you correctly!

May you have many more successful years of sharing delicious recipes such as this one, decadent albeit 🙂 – I have to bake 2 dozens cupcakes for my daughter's school and this may be the perfect cupcakes to make – very timely post indeed 🙂 Sorry you did not win my blog anniversary giveaway – random.org did the picking!       Thanks Priya – The quiz I set is actually pretty easy – all the answers are quite easy to find by making a couple of clicks on my site, although almost no-one got 100% so far!

      Will you be making a post about your cupcakes that you're baking? I'm looking forward to reading it (and of course seeing cupcake-filled pictures…. mmmmm!)

    OMG! Happy Bloggyversary, Charles! I know I'm so late with this. I've missed out on so many of your posts, soooo sorry. I've been a little out of sorts these days (daze?). Yes, you have come a long way, pictures and posts. And I certainly give this cake many thumbs up (if I had as many on me, do toes count?). Anyway, I also enjoy individual cakes rather than a ginormous chunk and by the end of my hacking at it … crumbs. And it's so much fun to decorate. In this case … Gorgeous!!!

    First of all a belated Happy Blogiversary. We also had ours in October. I agree with your comments esp about the communal aspect AND photography. That is definately an area I want to improve on. Your photos are wonderful. If the food tastes as good as it looks then OMG! Happy foody-blogging for the next year and beyond!
