Tapenade is another thing that can be customised in many ways. Once you’ve got the basics it’s a lot of fun to play with and experiment – capers, sun-dried tomatoes, parsley, cumin, anchovies…
Ingredients
– Olives (salt cured are preferable over brine cured)
– 1 or 2 cloves of garlic
– Olive oil
Instructions
- You’ll need about half a jar of olives (~1 cup). Remove all the pits and place into a blender/mixer with the garlic and about 3 tablespoons of olive oil. Blend for a couple of minutes until smooth. Spoon into a bowl, drizzle over a little more oil and serve with your dipping items of choice – crackers, bread, vegetables…
